Fresh food, and seafood in particular, spoils fast. Fish and other catch are highly perishable: once landed they must move immediately through an energy-intensive cold chain, and even then a large share is downgraded or lost before it reaches the consumer. The European Union discards about 132 billion euros of food every year, and losses are among the highest in the most perishable categories such as fish, fruit and vegetables. The current answer, continuous refrigeration, is expensive, energy-hungry, carbon-intensive and often unavailable to small fishers, coastal producers and cooperatives. Chemical preservatives raise clean-label and regulatory concerns. The result is wasted catch, wasted energy, and producers forced to sell immediately into a glutted market at depressed prices. There is no widely available way to hold fresh food, without a cold chain and without chemicals, long enough to reach better markets.
